Turkey Shepherd's Pie with Cauliflower-Parmesan Mash


If I am to take everything Al Roker of the Today Show says as gospel (and I do), the fall season is upon us. Now, we don't get much actual "fall" here in Dallas, it's still 80 degrees as I type this, but I do believe in Santa Al so I just take his word for it. I wait for that first cold snap to hit, then squeal in delight as I grab a sweater(!) and head outside to play in the fallen leaves drought-plagued yard, only to have it go back up to 85 the very next day. *sigh* But, no matter what the thermometer says, my tummy always seems to know when fall arrives, or at least when it should arrive, and I get the urge to make comforting dishes with deep, rich flavors. This is one such dish. Creamy, hearty and a luxurious mouth-feel with just enough silky gravy. And, in an effort to keep from looking like Mrs. Santa Claus by the time Christmas rolls around, it's also easy on the hips, thighs and cheeks (BOTH kinds) as it's under 350 calories and only has 15 grams of fat per serving. Oh, and did I mention it's delicious? It is.
